Simple Pizza Baguette Bites

These super-simple pizza baguette bites are right up there with the apricot + brie crostinis — can this even be considered a recipe?

With so many of us working from home, I feel compelled to share some of my favorite snacks to make, especially when that 2 o'clock slump settles in. And this is one of them. To be honest, a french baguette with just about any topping is a favorite snack/meal, whether 10a, 2p or an appetizer for dinner.

It really is the simple pleasures in life, like a quick pizza baguette bite, ready in less than 10 minutes.

Great afternoon snack or appetizer for your next dinner party

Quickly make a single serving or enough for the whole family

Ingredients:

  • a leftover baguette

  • pizza sauce

  • pepperoni (I used turkey pepperonis!)

  • shredded cheese

  • parmesan

  • optional: red pepper flakes

Instructions:

  1. Preheat the oven to 350°F.

  2. Slice the baguette into 1/2" slices and place on a baking sheet.

  3. To each baguette slice, add a spoonful of pizza sauce, pepperoni, and cheese.

  4. Toss in the oven for 6-7 minutes; or until the cheese is melted.

  5. Top with parmesan and red pepper flakes, if desired.
