Quick & Easy Pepperoni Mozzarella Bites
I've been seeing that 2 ingredient dough going around the innerwebs and although I'm not a purist, I typically do go for the “real” deal when it comes to bread or baked goods. I want all of the gluten, yeast, and carbohydrates.
I also love, probably just as much, when scanning through a cookbook and realize I have all of the ingredients in the fridge or pantry.
This recipe came across my desk (read: sitting on the couch) and immediately jumped up and tossed them together in a matter of minutes.

This recipe is truly so customizable, add whatever protien sounds good to you:
ground beef, canadian bacon, or spicy italian sausage to name a few
Or split half of the recipe and make a sweet treat using sugar and cinnamon!
Quick & Easy Mozzarella Pepperoni Bites
Ingredients: for the dough
180g self-rising flour
180g cottage cheese (blended)
1/2 tsp salt
Directions:
Mix, mix, mix, then knead until smooth-ish (approx 2-3 min)
Split dough into 10 - 12 pieces
Flatten each piece into a disc and add mozzarella and sliced pepperoni (or whatever you’d like on the inside)
Pinch dough together to form a small ball, place on parchment lined baking sheet and set aside
Allow oven to preheat to 350° F
Ingredients: for the garlic & herb butter for brushing & dipping
1/2 stick of butter
Minced garlic
Minced parsley
Directions:
Melt butter, add in the garlic and parsley
Generously brush each dough ball with melted garlic & herb butter
Bake at 350° F for 20ish minutes, or until desired shade of golden brown
Serve with remaining melted butter, pizza sauce, ranch, or your favorite dipping sauce
These are best if stored in an airtight container in the refrigerator.
